Rice Basics

  • 1 cup: Rice
  • 2 cups: Water
  • 1: teaspoon salt
  • 1: teaspoon oil

To cook most rices, you slightly less than 2 parts water for 1 part rice. Some rices need to be rinsed before cooking to remove excessive starch powder (which makes your rice… starchy!)

Bring water to boil, add salt and oil, bring to low minimum heat, add rice, stir well and cover for 15 to 20 minutes.

Test rice consistency after 15 minutes. Fluffy = Good!

Portions:
As side dish: ¼ cup rice per person
As main dish: ½ cup rice per person

Baked Apples

Baked Apples
serving: 1 apple per person
  • 5 Apples
  • 5 Cinammon Sticks
  • 1/2 to 1 cup Sugar
  • Oven pan
  • Non Stick sheet or Aluminum
Preheat oven to 400 degrees. Cut the apple tops and take out seeds with knife or spoon. Add cinnamon sticks, fill the apples up with sugar and place tops back on.
Put apples in the oven and cook until brown for 30 minutes to an hour (depending on the size of the apples).
Fun variation: Flambé! Pour sweet liquor over apples after taking them out of the oven, and fire it up!

Basmati Rice

Simple, tasty and aromatic Basmati Rice.

Portions:

  • 1 cup rice
  • 2 cups water
  • 1 diced onion
  • 1 tablespoon cardamon seed
  • 1 tablespoon whole cloves
  • 1 tablespoon fennel seeds
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Oil (peanut, corn, canola or grapeseed)

Put oil in a pot and place on maximum heat.
Add Onions and spices. Mix until light brown.

Add rice and stir until rice gets white in the middle.
Do not burn.
Add water and stir.
Bring to minimum heat and cover for 20 - 25 minutes.

If you can, remove big chunks of cloves and cardamon before serving. Fennel is OK to leave in, it’s small and you don’t really notice it.

Chinese Style Garlic Sweet Ribs

Chinese Style Garlic Sweet Ribs

This recipe take about 1 hour but can be tackled while preparing other dishes.

  • 2-4 pounds Porc Ribs (cut into small pieces)
  • 1 bulb of Garlic
  • 1 1/2 cups of Sugar
  • Salt to taste
  • Pepper to taste
  • 1 tablespoons oil (peanut, corn, grapeseed or canola)

Put the oil in a large pot and place on maximum heat

Throw in ribs and garlic and stir for five minutes.

Add sugar and stir constantly.

After five to ten minutes or stirring, you should see the sauce getting darker. Once it is really dark and caramelized in the bottom of the pot, add water to top of ribs. Do not cover pot.

Bring to medium heat and stir intermittently for 30 minutes to an hour.
Top with green onions (optional)

Serve.

Banana Bread

Banana Bread (with Walnuts and Dates)

An easy and incredibly tasty no fat Banana Bread!

  • 3 mashed bananas
  • 2 eggs
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (or more if you like cinnamon)
  • 1/2 tsp nutmeg (or half nutmeg nut)

Optional (but delicious)

  • 1/2 to 1 cup whole walnuts
  • 1/2 to 1 cup dates

Preheat over to 350f.

Mash bananas and mix in egg. Mix in sugar.

Mix flour, baking soda and spices in seperate bowl and add to wet ingredients.

This is the time to add those “extra ingredients”. I like to add chopped walnuts and dates. You can try adding whatever you like… and share the results! I added chocolate chips once and the cake was a little too sweet…
Grease pan and bake for 60 to 70 minutes.

Busy at Zephyr DVD….

We’ve been really busy at Zephyr DVD these past couples weeks… we’re still making great lunches but don’t have time to film and edit them!
