Carrot Salad


5-minute carrot salad.

Most ingredients are optional… except the carrots and dressing!!

  • 4 or 5 large carrots
  • fistfull of fresh herbs (either dill / corriander/ mint / parsley)
  • 1/3 cup sunflower seeds (raosted & unsalted)
  • 3 to 6 Radishes or 1 stick of celery
  • 1 Pear

Salad dressing

  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar (less if not balsamic)
  • 1/2 cup orange juice
  • 1 garlic glove
  • 1 1/2 teaspoons Dijon mustard
  • Salt & Pepper to taste

Grate carrots, put in bowl.

Cut herbs & radishes (and/or celery & pear), put in bowl.
Mix in sunflower seeds…

For the dressing, start with oil, add vinegar to taste, wisk in mustard.

Add orange juice, garlic and spices. Mix.

Pour over salad and mix it all up!

    This salad looks great! I am definitely trying it although I am afraid of preparing the dressing but I’ll give it a try! Thanks for a great idea!
