Banana Bread
Banana Bread (with Walnuts and Dates)
An easy and incredibly tasty no fat Banana Bread!
- 3 mashed bananas
- 2 eggs
- 1 cup flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (or more if you like cinnamon)
- 1/2 tsp nutmeg (or half nutmeg nut)
Optional (but delicious)
- 1/2 to 1 cup whole walnuts
- 1/2 to 1 cup dates
Preheat over to 350f.
Mash bananas and mix in egg. Mix in sugar.
Mix flour, baking soda and spices in seperate bowl and add to wet ingredients.
This is the time to add those “extra ingredients”. I like to add chopped walnuts and dates. You can try adding whatever you like… and share the results! I added chocolate chips once and the cake was a little too sweet…
Grease pan and bake for 60 to 70 minutes.

a little trick for an interesting crust. sprinkle some brown sugar (perhaps a few tablespoons) onto the batter before putting the pan in the oven. turn the broiler on a few minutes before removing the cake from the oven in order to lightly caramelize the sugar (while keeping an eye on it). the crust will be crispy, sweet&scrumptious.

I’m sure to prepare this tomorrow, it looks and sounds delicious. (Plus we’ve got old bananas all over the house) My parents just went to Sri Lanka to check out this project my dad’s working on there (bakery) and they now want everything to have something to do with banana; banana ice, banana juice, banana pie, you name it. Great work on letting me find this! (oo long!)
